  • Größe wählen: Alltag: ~46×32 cm; BBQ & Prep: 50×40 cm oder größer für Schneiden, Mise en Place und Anrichten zugleich.
  • Workflow aufbauen: Links schneiden, mittig arbeiten, rechts GN-Behälter (oder umgekehrt für Linkshänder). Abfall separat.
  • Pflege & Planlage: Nach dem Spülen gut trocknen. In der Heizperiode regelmäßig ölen – erhält Oberfläche und Maßhaltigkeit.

Kürbis-Gnocchi mit Salbeibutter & gerösteten Kernen

Zutaten (4 Portionen)
  • 800 g Hokkaido (gewürfelt)
  • 300–350 g Weizenmehl (Type 405), plus etwas zum Bestäuben
  • 1 Ei (Größe M)
  • 50 g Parmesan, fein gerieben
  • Salz, Pfeffer, Muskat
  • 80 g Butter
  • 12–15 Salbeiblätter
  • 40 g Kürbiskerne, grob gehackt
  • Optional: etwas Zitronenabrieb
Zubereitung
  1. Prep: Kürbis entkernen, mit Schale würfeln (alles im GN-Behälter sammeln). Kürbiskerne trocken rösten, beiseite.
  2. Garen: Kürbis dämpfen oder im Ofen (180 °C Umluft, 25–30 Min.) weich garen. Auf dem Brett kurz ausdampfen lassen.
  3. Teig: Kürbis zerdrücken, 300 g Mehl, Ei, Parmesan, Salz/Pfeffer/Muskat zügig einarbeiten. Nur so viel Mehl zufügen, dass ein weicher, formbarer Teig entsteht.
  4. Formen: Arbeitsfläche bemehlen, Teig zu Rollen (Ø ca. 2 cm) formen, Stücke à 2 cm schneiden, über Gabelrücken rollen.
  5. Kochen & Butter: In siedendem Salzwasser garen (2–3 Min., bis sie aufsteigen). In schäumender Butter mit Salbei schwenken.
  6. Finish: Mit Kernen und Zitronenabrieb servieren, Pfeffer frisch mahlen.

BBQ-Ragout vom Wild mit Wurzelgemüse

Zutaten (4–6 Portionen)
  • 1,2 kg Wildschulter/-keule (Würfel, 3–4 cm)
  • 2 Zwiebeln, 2 Karotten, 1 Stange Sellerie
  • 2 EL Tomatenmark
  • 300 ml Rotwein, 400 ml Wild-/Rinderfond
  • 2 Lorbeerblätter, 5 Piment, 5 Wacholder
  • 1 EL Preiselbeeren
  • Öl, Salz, Pfeffer
  • Optional: 1 EL Kakao oder Zartbitterschokolade
Zubereitung
  1. Mise en Place: Gemüse auf der Station würfeln (GN getrennt). Gewürze leicht andrücken.
  2. Anrösten: Fleisch portionsweise scharf anbraten, salzen, herausnehmen. Gemüse im Bratensatz rösten, Tomatenmark kurz karamellisieren.
  3. Schmoren: Mit Rotwein ablöschen, einkochen, Fleisch & Fond zugeben, Lorbeer/Piment/Wacholder. Zugedeckt 1,5–2 Std. sanft schmoren.
  4. Abschmecken: Preiselbeeren, Salz, Pfeffer; optional Kakao/Schokolade für Tiefe. Konsistenz mit Fond/Wasser justieren.
  5. Servieren: Mit Brot/Schupfnudeln. Auf dem Brett anrichten – kurze Wege, heiß auf den Tisch.

What makes a good cutting board?

A high-quality cutting board is characterized by three things: the right material, well-thought-out functionality, and a construction that will last. We use solid oak and walnut wood – natural, robust, antibacterial, and gentle on knives. Our cutting boards are 4 cm thick, making them noticeably more stable than many commercially available models. No warping, no slipping – just a reliable work surface that will last for decades.

Our boards also make a difference in terms of functionality: a precisely milled juice groove, double-sided usability, and, depending on the model, practical recessed handles or stainless steel elements ensure that the board becomes a real tool – in the kitchen, at the grill, or on the buffet.
