
Onion jam & veal loin – Perfectly served on wood
If you think onions only bring tears, then you've probably never tasted delicious onion jam. Do you think cooking always has to be a complicated affair? I have a recipe for you that proves just the opposite. So, get out your knife, your elmwood cutting board, and your pan—it's going to be tender and incredibly delicious!
The ingredients: What you really need
Imagine we are preparing friendships for life today:
- 400 g red onions (they are sweeter than their yellow relatives)
- 4 tbsp olive oil (we don't want anything to burn)
- 100 g brown sugar (for the sweet caramel magic)
- A little bit of witchcraft: Bay leaves, cinnamon stick and cloves
- 100 ml balsamic vinegar (indispensable for any good onion jam)
- 6 sprigs of thyme (naturally fresh to maximize flavor)
- salt, pepper – very classic.
For the main actor:
- Approx. 450 g veal loin (likes it cooked gently)
- 150g Taleggio (or Brie for a milder flavor)
Preparation: A cooking adventure in 25 minutes
1. The Onion Party:
First, finely slice the onions into rings and sauté them in a pan with 2 tablespoons of olive oil. Once they're translucent, add the brown sugar and let it caramelize. Then add the spices and deglaze with balsamic vinegar. Continue simmering until the jam reaches a velvety consistency. Just before the end, stir in the thyme and season with salt and pepper.
2. The veal loin – our tender star:
Wash the meat thoroughly, pat dry, and shape it with kitchen string. Then lightly salt it and sear it in a hot pan with 2 tablespoons of oil for two minutes on each side until golden brown. Then bake it in the oven at 175°C for about 10 minutes until tender and pink.
3. Crowning conclusion:
While the veal loin is cooking in the oven, slice the Taleggio. Preheat the oven to 225°C, place the cheese on top of the meat, and bake for about 5 minutes, until the cheese melts nicely.
Serve like a pro
