Culinary reviews and outlooks on the food trends of 2024

The year is coming to an end and I ask myself: What has actually happened in the culinary world?

2024 was a year full of trends, experiments, and surprises in the culinary world—some of which were particularly exciting, while others perhaps required some getting used to. Personally, I tried many innovations, including some real successes like zero-waste pesto, as well as less convincing results like lentil brownies. However, it remains undeniable that this year highlighted the creativity, sustainability, and enthusiasm for experimentation in the food world. A look back at some of the year's highlights offers not only entertainment but also valuable insights.

1. Zero Waste: Trying to use everything

This year, for the first time, I turned carrot peels into crispy chips. The result was not only delicious, but briefly made me feel like a sustainability-minded Michelin-starred chef, even though the second batch ended up charred. The zero-waste movement has gained momentum because, according to the German Environmental Aid, more and more households are actively reducing food waste. The best part? It's often easier than you think. For example, you can easily make tasty stocks from vegetable scraps.

Tip for 2025: Let your creativity run wild and experiment with kitchen leftovers.

2. Local superfoods: Local alternatives instead of exotics

In 2024, the focus was on rosehips – a source of vitamin C that, despite harvesting challenges, ultimately rewarded me with homemade jam. Sustainable, regional products like flaxseed and walnuts are becoming increasingly popular and are finding their way into our kitchens as alternatives to imported superfoods.

3. Open Fire Cooking: My Ember Disasters

Cooking over an open fire turned out to be a true adventure: My first steak wasn't perfect, but the second attempt was flavorful. This method appeals to the simplicity and rustic feel, making it a long-lasting trend.

My tip: Try cooking vegetables directly in the embers - it is forgiving and suitable for beginners.

4. Plant-Based BBQ: Vegetables conquer the grill

Even though I'm a meat lover, I was surprised by the versatility of vegetables on the grill. Smoked carrot hot dogs became a highlight, proving that plant-based diets can be creative and delicious and have great potential even in 2025.

5. Desserts that are fun

Flame-grilled chocolate cakes and ice cream prepared live at the table not only provided entertainment, but also transformed the dessert into a spectacular experience. This demonstrates how food can be both a culinary delight and entertainment.

Conclusion: 2024 was an inspiring year, rich in learning experiences and culinary discoveries. It showed us that it's worthwhile to try new approaches in the kitchen.
