🔥 US BBQ – Smoked, Sauced & Full of Flavor

BBQ in the USA varies from region to region – but all styles have one thing in common: **Low & Slow is the secret**! It's all about long cooking at low temperatures, smoke, spices, and lots of patience.

  • Texas-Style Brisket – Low & Slow smoked beef brisket
  • Memphis-style ribs – Spicy pork ribs with BBQ rub & sauce
  • Pulled pork – Slow-cooked pork shoulder with a smoky aroma

🔥 3 original recipes for US BBQ

1. Texas-Style Brisket – Smoked & Tender

Ingredients for 8-10 servings:

  • 5 kg beef brisket
  • 2 tbsp coarse sea salt
  • 2 tbsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp smoked paprika powder
  • Wood chips (preferably hickory or mesquite)

Preparation:

  1. Preheat the smoker to **110°C** indirect heat.
  2. Rub brisket with salt, pepper, garlic and onion powder, and paprika.
  3. Place the meat in the smoker with the fat side up and smoke for **10-12 hours**.
  4. After about 6 hours, wrap in aluminum foil (Texas Crutch method) and continue cooking until an internal temperature of **92–96°C** is reached.
  5. Remove brisket from the smoker, **let rest for at least 1 hour**, then cut into thin slices.

2. Memphis-Style Ribs – Dry Rub & Glaze

Ingredients for 4 people:

  • 2 kg pork ribs (baby back ribs or spare ribs)

Memphis Dry Rub:

  • 2 tablespoons brown sugar
  • 1 tbsp paprika powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cayenne pepper

Preparation:

  1. Prepare the grill or smoker to **120°C**.
  2. Remove the silver skin from the ribs and rub generously with the dry rub.
  3. Grill ribs indirectly for 5-6 hours, spraying occasionally with apple cider vinegar.
  4. Finally, brush with BBQ sauce and let it caramelize for 10 minutes at higher heat.

3. Pulled Pork – Tender, smoky & full of flavor

Ingredients for 8 servings:

  • 4 kg pork shoulder
  • 2 tbsp coarse sea salt
  • 2 tbsp paprika powder
  • 2 tsp garlic powder
  • 1 tsp cayenne pepper
  • 1 tsp cumin
  • BBQ sauce of your choice

Preparation:

  1. Rub the pork shoulder with the spices.
  2. Prepare the smoker to **110–120°C**.
  3. Slowly smoke the meat for **12-16 hours** until an internal temperature of **92°C** is reached.
  4. Let the meat rest for 1 hour, then shred with two forks and mix with BBQ sauce.
