
New Year's Eve Burger: Glitter, Glamour & Enjoyment on Elm Wood
A burger that not only explodes with flavor, but also brings New Year's Eve glamour to your plate with edible glitter and festive flavors!
Ingredients (for 4 burgers):
For the patties:
- 500 g Wagyu or ground beef (alternatively Black Angus)
- 1 tsp smoked paprika powder
- 1 tsp high-quality garlic oil or olive oil with rosemary
- salt and pepper
For the topping:
- 4 brioche buns (with black sesame or dyed with activated charcoal for a dark look)
- 4 slices of blue cheese or Gouda with chili
- 1 fig (thinly sliced)
- 1 handful of arugula
- 4 slices of pancetta or Parma ham, crispy fried
- 2-3 pickled cucumbers (thinly sliced)
For the sauce:
- 2 tbsp crème fraîche
- 1 tsp Dijon mustard
- 1 tsp honey
- A splash of Prosecco or Champagne
Extras for New Year’s Eve shine:
- Edible gold or silver glitter (for the bun tops)
- Mini sparklers for presentation
Preparation:
Season the ground beef with paprika, garlic oil (or olive oil with rosemary), salt, and pepper. Shape into four equal-sized patties and let rest briefly to allow the flavors to penetrate. Sear the patties on a hot grill or in a pan over high heat (about 2–3 minutes per side). Near the end of the cooking time, place a slice of blue cheese or chili-flavored Gouda cheese on each patty and let it melt slightly.
Halve the brioche buns and briefly toast the insides on the grill or in a pan. For a wow effect, lightly sprinkle the tops with edible glitter. Mix crème fraîche, Dijon mustard, honey, and a splash of Prosecco into a creamy sauce. Season to taste with salt and pepper.
To assemble the burger, first spread the sauce on the underside of the bun, then place arugula on top, add the melted cheese patty, layer the fig and pickle slices, and top with crispy fried pancetta or Parma ham. Finally, place the top half of the bun on top.
Arrange the finished burger on a rustic elm wood cutting board, insert mini sparklers into the tops of the buns, and light them just before serving – a real eye-catcher! Serve with rosemary-baked potatoes and homemade aioli or spicy chili mayo for an extra kick.
For a vegetarian version, replace the patty with a grilled portobello mushroom and the pancetta with crispy halloumi.
