Turkish BBQ thrives on intense flavors! Cumin, paprika, garlic and yogurt marinades meet the **finest lamb and beef**. Grilling is traditionally done on the **Mangal**, an open charcoal grill.

🔥 3 original recipes for Turkish BBQ

1. Adana Kebab – Spicy minced meat skewers

Ingredients for 4 people:

  • 500 g minced lamb (alternatively minced beef)
  • 1 teaspoon coarse sea salt
  • 1 teaspoon paprika powder (sweet or hot)
  • 1 teaspoon cumin
  • 1 teaspoon chili flakes
  • 1 teaspoon pepper
  • 2 cloves of garlic, finely chopped
  • 1 tablespoon finely chopped parsley
  • 1 teaspoon olive oil
  • flatbread & yogurt as a side dish

Preparation:

  1. Mix the minced meat well with all spices, garlic, parsley and olive oil.
  2. Form into long skewers, approx. 20 cm long.
  3. Prepare the grill for medium-high direct heat.
  4. Grill the skewers for about 8-10 minutes, turning regularly.
  5. Serve with flatbread and yoghurt – the perfect Adana Kebab is ready!

2. Şiş Kebab – lamb skewers from the Mangal grill

Ingredients for 4 people:

  • 600 g lamb meat (e.g. from the leg), cut into cubes
  • 3 tablespoons olive oil
  • 2 cloves of garlic, finely chopped
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • 1 teaspoon paprika powder
  • 1 teaspoon coarse sea salt
  • 1 lemon, cut into wedges

Preparation:

  1. Marinate the lamb with olive oil, garlic, cumin, thyme, paprika powder & salt.
  2. Leave to rest in the refrigerator for at least 2 hours (or overnight).
  3. Preheat the grill to high direct heat.
  4. Put the meat cubes on skewers and grill for about 6-8 minutes.
  5. Drizzle with lemon juice and serve hot.

3. Tavuk Kanat – Grilled chicken wings with yogurt

Ingredients for 4 people:

  • 1 kg chicken wings
  • 150 g yogurt
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon paprika powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon juice

Preparation:

  1. Marinate chicken wings with yogurt, olive oil, spices & lemon juice.
  2. Allow to steep for at least 2 hours.
  3. Prepare the grill for medium heat.
  4. Grill the wings for about 15-20 minutes, turning them regularly.
  5. Serve with flatbread & yoghurt dip.
