🔥 3 original recipes for US BBQ

1. Texas-Style Brisket – Smoked & Tender

Ingredients for 8-10 servings:

  • 5 kg beef brisket
  • 2 tablespoons coarse sea salt
  • 2 tablespoons black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tbsp paprika powder (smoked)
  • wood chips (preferably hickory or mesquite)

Preparation:

  1. Preheat the smoker to **110°C** indirect heat.
  2. Rub brisket with salt, pepper, garlic & onion powder and paprika.
  3. Place the meat in the smoker with the fat side up and smoke for **10-12 hours**.
  4. After about 6 hours, wrap in aluminum foil (Texas Crutch method) and continue cooking until a core temperature of **92–96°C** is reached.
  5. Remove brisket from smoker, **let rest for at least 1 hour**, then cut into thin slices.

2. Memphis-Style Ribs – Dry Rub & Glaze

Ingredients for 4 people:

  • 2 kg pork ribs (baby back ribs or spare ribs)

Memphis Dry Rub:

  • 2 tablespoons brown sugar
  • 1 tablespoon paprika powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper

Preparation:

  1. Prepare the grill or smoker to **120°C**.
  2. Remove the silver skin from the ribs and rub generously with the dry rub.
  3. Grill ribs indirectly for **5-6 hours**, spraying occasionally with apple cider vinegar.
  4. Finally, brush with BBQ sauce and let it caramelize for 10 minutes at a higher heat.

3. Pulled Pork – Tender, smoky & full of flavor

Ingredients for 8 servings:

  • 4 kg pork shoulder
  • 2 tablespoons coarse sea salt
  • 2 tablespoons paprika powder
  • 2 teaspoons garlic powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon cumin
  • BBQ sauce of your choice

Preparation:

  1. Rub the pork shoulder with the spices.
  2. Prepare the smoker to **110–120°C**.
  3. Slowly smoke the meat for **12-16 hours** until an internal temperature of **92°C** is reached.
  4. Let the meat rest for 1 hour, then shred with two forks and mix with BBQ sauce.
