Onion jam – simple recipe to fall in love with

If you think onions only bring tears, then you probably have never tasted the delicious onion jam. Do you believe cooking always has to be a complicated affair? I have a recipe for you that proves exactly the opposite. So, grab your knife, your elm wood cutting board, and your pan – it will be tender and incredibly delicious!

The ingredients: What you really need

Imagine we are preparing lifelong friendships today:

  • 400 g red onions (they are sweeter than their yellow relatives)
  • 4 tbsp olive oil (we don’t want anything to burn)
  • 100 g brown sugar (for the sweet caramel magic)
  • A little witchcraft: Bay leaves, cinnamon stick, and cloves
  • 100 ml balsamic vinegar (essential for any good onion jam)
  • 6 sprigs fresh thyme (of course fresh, to maximize the aroma)
  • Salt, pepper – quite classic.
  • For the main actor:

  • Approx. 450 g veal loin (prefers to be cooked gently)
  • 150 g Taleggio (or Brie for a milder note)
  • Preparation: A cooking adventure in 25 minutes

    1. The onion party:

    First, finely slice the onions into rings and sauté them in a pot with 2 tbsp olive oil. Once they are translucent, add the brown sugar and let it caramelize. Then add the spices and deglaze with balsamic vinegar. Continue to simmer until the jam reaches a silky consistency. Just before finishing, stir in the thyme and season with salt and pepper.

    2. The veal loin – our tender star:

    Thoroughly wash the meat, pat it dry, and shape it with kitchen string. Then lightly salt, sear in a hot pan with 2 tbsp oil for two minutes on each side until it is nicely golden brown. Then bake in the oven at 175 °C for about 10 minutes until it is tender pink.

    3. Crowning conclusion:

    While the veal loin is cooking in the oven, slice the Taleggio. Preheat the oven to 225 °C, place the cheese on the meat, and bake for about 5 more minutes until the cheese melts beautifully.

    Serve like a pro

    Arrange the veal loin on a stylish solid wood cutting board or a handcrafted maple serving board, place the onion jam alongside, and indulge – your culinary masterpiece is ready!

    Tip for the experimental ones:

    Is the Taleggio too intense? Try Brie. Even more adventurous? How about a strong blue cheese?
