Culinary reflections and outlooks on the food trends of 2024

The year is coming to an end and I ask myself: What has actually happened in the culinary world?

2024 was a year full of trends, experiments and surprises - some really exciting, others rather... well, let's say "takes some getting used to". I tried a few things myself, some worked really well (zero waste pesto!), others less so (keyword: lentil brownies). But one thing is clear: This year has shown us how creative, sustainable and experimental the world of food can be. Let's take a look back together - with a wink and a few personal highlights.

1. Zero Waste: Trying to use everything

This year, for the first time, I didn't throw away carrot peels, but made chips out of them. The result? Crispy, delicious, and I felt like a sustainable Michelin-star chef for a moment. Shortly afterwards, however, the second batch ended up charred in the trash can - so much for "perfect."

Why stay zero waste?

According to a study by the German Environmental Aid, every second household is now trying to waste less food. And the best thing about it? It's easier than you think. I now often make stocks from vegetable scraps - just throw them in the pot and let them cook. Does it always look good? No. But it tastes good!

Tip for 2025: Experiment with your leftovers. Whether it's vegetable peelings or bread that's gone too old - you can often turn them into little masterpieces (or at least decent snacks).

2. Local superfoods: local alternatives instead of exotic ones

This year was the year of the rose hip. Yes, you read that correctly. After reading that rose hips contain a lot of vitamin C, I headed into the forest full of energy. Hours later, scratched and with a handful of rose hips, I knew: superfoods are hard work. But hey, the jam was really good in the end - and I could proudly say: "Homemade!"

Will this remain a trend?

Definitely! Local products such as linseed, parsnips or walnuts are increasingly replacing expensive imports. According to a study, 72% of consumers want to shop more regionally. The good thing is that you don't always have to collect rose hips - there are many alternatives available directly in the supermarket.

3. Open Fire Cooking: My Ember Disaster

I admit, I was skeptical. Cooking over an open fire sounds exciting, but also pretty… messy. Nevertheless, I tried it: cooking a steak directly in the embers. What can I say? It was an adventure. My first steak was half charred, half raw - but the second attempt tasted like it came straight from an Argentinian ranch kitchen.

Why this remains:

It's just that feeling of "back to basics". No frills, just fire, smoke and flavour. I think this trend is here to stay for a long time - especially because it's so much fun (even if a piece of meat falls into the flames).

My tip: Try cooking vegetables directly in the embers – sweet potatoes or peppers are a good start and will forgive you for small mistakes.

4. Plant-Based BBQ: Vegetables conquer the grill

I love meat. But 2024 taught me one thing: grilled vegetables are not a punishment, they are damn tasty. My highlight? Smoked carrot hot dogs. Yes, that sounds strange, but with the right marinade they actually taste amazing.

And what happens next?

I'm sure the plant-based approach will remain big in 2025. Vegetables are versatile, healthy and give us the opportunity to be a bit more creative. My personal plan for next year: grill mushrooms without them drying out. If you have any tips - please share them!

5. Desserts that are fun

A chocolate cake that is flambéed right at the table? At first I thought: "Does that have to be done?" But then I tried it - and I swear, my guests thought I was a magician. Admittedly, the first attempt ended with a small burn hole in the placemat, but the second was a complete success.

Why desserts will be even more spectacular in 2025:

Food is entertainment, and desserts in particular are the perfect stage for it. Whether it's flambéed fruit, ice cream prepared live or a cake that spits out chocolate when cut - there are no limits to your imagination.

My tip: Try a simple dessert with a wow factor. A flambéed fruit skewer is a good start - and pretty foolproof.

Conclusion: 2024 has inspired us – with rough edges

This year wasn't perfect, but that's exactly what made it exciting. I learned new things, made mistakes and was happy about small successes. And I think that's exactly what trends are all about: They make us try things we would never have thought of before.
