Loving grill tips and BBQ trends 2025
Every year I resolve to enjoy the barbecue season even more. To try out new recipes, perfect old techniques and maybe bring a few BBQ trends from around the world to Germany. And then? Then time passes, I make the same classics again and in the fall I'm annoyed that I wasn't braver.
Not this year!
2025 will be different. This year there is a BBQ bucket list - a list of barbecue ideas that absolutely have to be implemented. And don't worry, it's not just about complicated projects. Some things are so simple that I wonder why I haven't done them long ago.
So: apron on, fire at will and let’s get started with the ultimate BBQ challenges of 2025!
🔥 Review: What was hot in 2024?
- Smash burgers on the plancha – crispy patties with maximum roasted flavor. So why not try a smash steak ?
- Asado & fire plate grilling – the open fire is back! Argentinian asado, large pieces of meat over embers – that is BBQ in its original form.
- Yakitori & Binchotan Grilling – That small but incredibly hot charcoal makes a huge difference.
- Dry Aging & Premium Beef – 2024 was the year of expensive cuts. But in 2025 I want to get the best out of simple ingredients.
🔥 My BBQ bucket list for 2025 – I want to try this!
1️⃣ The easiest BBQ sin: bread on the grill!
Why not put bread in the spotlight?
- Pizza dough with olive oil & salt on the grill
- Let the focaccia with rosemary rise slowly next to the embers
- Sweet version: flatbread with honey & cinnamon
2️⃣ Smoked Butter – A flavor boost for everything!
- hickory butter for steaks
- Applewood Butter for Fish
- Herb butter with smoky notes for corn on the cob
3️⃣ Argentinian Asado – Whole piece of meat over an open fire
A real asado, with a tripod and meat over the embers – this year I’m going to make it happen!
4️⃣ Nordic BBQ trends: Fish directly on the coals!
This is standard in Scandinavia – time to test it yourself.
5️⃣ The easiest BBQ snack: roasted nuts on the grill
- Salty & smoky: paprika powder & sea salt
- Sweet & spicy: honey, chili & cinnamon
- Asian style: soy sauce & sesame
6️⃣ The return of the real BBQ classics – A 12-hour brisket
Back to the roots: Low & Slow , 12 hours of Texas-style brisket.
7️⃣ Grilling like in the USA: Bacon-Wrapped EVERYTHING!
- Bacon-Wrapped Mozzarella Sticks
- Bacon-Wrapped Chicken Wings
- Bacon-Wrapped Dates with Blue Cheese
8️⃣ A touch of Otto Lenghi – vegetables with a fire kick
I love it when simple ingredients explode with flavors. This year I'm going to delve deeper into Otto Lenghi and incorporate his techniques into BBQ.
- Eggplants in the embers – then with yogurt & pomegranate
- Whole cabbages on the grill – with lemon butter
- Roasted Carrots with Harissa & Honey
