Preparation:
Season the ground meat with paprika, garlic oil (or rosemary-infused olive oil), salt, and pepper. Form into four equally sized patties and let rest briefly to absorb the flavors. Sear the patties on a hot grill or in a pan over high heat (about 2-3 minutes per side). Just before they are done, place a slice of blue cheese or chili gouda on each patty and let it melt slightly.
Cut the brioche buns in half and briefly toast the insides on the grill or in the pan. For the wow effect, lightly sprinkle the tops with edible glitter. Mix crème fraîche, Dijon mustard, honey, and a splash of prosecco into a creamy sauce. Season to taste with salt and pepper.
To assemble the burger, first spread the sauce on the bottom half of the bun, then layer on the arugula, add the melted cheese patty, stack on the fig and pickle slices, and crown with crispy fried pancetta or Parma ham. Finally, place the top half of the bun on.
Arrange the finished burger on a rustic elm wood cutting board, stick mini sparklers into the tops of the buns, and light them just before serving – a real eye-catcher! As a side, roasted rosemary potatoes and homemade aioli or spicy chili mayo are recommended for an extra kick.
For a vegetarian version, replace the patty with a grilled portobello mushroom and the pancetta with crispy halloumi.
Happy New Year and enjoy! 🎉
